The aroma is very sweet, with distinct notes of cocoa powder and milk chocolate. It’s slightly fruity, with hints of figs and loquats. The flavor remains sweet, with notes of nuts such as hazelnuts and walnuts. On the palate, it’s dense, with a syrupy body and very mild acidity. A well-balanced coffee that’s excellent on its own and even better with milk.

Perched on the slopes of the Turrialba volcano at 1,400 MASL, Aquiares is Costa Rica’s largest single-block coffee plantation. Owned by Diego Robelo and his family, the farm is a stunning natural landscape, crisscrossed by spring-fed waterways and rich with history dating back to pre-Columbian times.

We’ve selected this coffee because of the incredible transparency behind it. This marks the ninth year that NOMAD Coffee has partnered with Diego, and their seventh year under a Direct Trade agreement. By negotiating prices directly with the producer and handling their own imports from Costa Rica to Barcelona, NOMAD ensures that the value is reinvested directly back into the farm’s infrastructure and community.

The Process: Honey
Quality starts with density selection in water, ensuring only the best cherries move forward. For this Honey process lot, the coffee is pulped and sun-dried for two days on ceramic tiles, followed by eight days on raised beds. The drying is finished in a "Guardiola" (mechanical dryer) for 24 hours to ensure the batch is perfectly homogenized and stable.
